Peru's and Lima's culinary scene at the moment is extremely exciting. Lima, leading the way with more chef's schools than any other city in world, is providing a young generation of chefs and culinary experts that are surprising local and foreign connoisseurs alike.

In a country where there are 12 different cultural and regional styles of cooking, food is a serious passion. At Aracari we offer you a fantastic opportunity to learn from Peru's top restaurateurs during the course of a unique cuisine trip, hand-crafted to suit your tastes.

You can choose from a one-day to multi-day immersion in Peruvian cuisine, accompanied by a selected host who will interpret the experience and make sense of this universe of fragrances, colours and flavours. As a light introduction, how about sampling the tasting menus at the best restaurants in Lima.

Or, if you prefer to start at the grass roots we can plan a day of sensations, visiting the fish market at 5am and exploring the sprawling Surquillo Market guided by an expert chef. Besides potatoes (there are 3,000 varieties in Peru!), this market has a vast array of exotic fruits and vegetables, many of which you will not have seen before. As Gourmet magazine lists, “tropical fruits from the Amazon, black scallops from the Northern lakes, wild mushrooms from the Sacred Valley…” they can be all found here. Finish the day with dinner at one of the best restaurants in Lima where you can taste many of the foods seen on your travels.

Of course, if you would like to take Peruvian cuisine a step further, we can arrange for cooking lessons at a number of places, including Hacienda Santa Rosa, Hotel Sol y Luna or the wonderful retreat of Ticllabamba.

If a dedicated cuisine experience is too intense, we can add flavours into your itinerary to ensure that you get to eat at the best establishments in town. We feature five restaurants, (but recommend many others: see recommendations) three for high cuisine: Astrid & Gaston in a formal yet warm setting, set in a lovely Miraflores mansion, Rafael and Malabar; and two for more casual dining: Cebicheria La Mar, and the deli T'anta in San Isidro.
